Gadbad Icecream

My version of the famous “Mangalore Gadbad Icecream” that we all relish in our family. There are no rules about how and what goes into making it. It is a personal choice and availablity of fruits, nuts and ice cream at hand.

There is an interesting story about how this combination of frozen dessert came into existence. It is said that one late evening in a restaurant in #Mangalore, a cook put together different flavours of icecream, fruits, nuts, sauces & jelly together to make an icecream #sundae for a customer who was unhappy with his ice cream order. This pleased the customer so much that it went on the restaurant’s menu permanently. Since it was made in gadibidi (meaning: “hurry/haste” in kannada) the name”Gadbad Icecream” stuck forever.😁

I have lot of fond memories attatched to this icecream. My cousin would treat us sisters with this delicious sundae whenever we visited him during summer vacations. Also, the first icecream me and Mr.A had on our first outing as newly weds.😉

Ingredients:

  • Diced mango – 1/2
  • Mango ice cream – 2tbsp
  • Strawberry jelly cubes – 7 to 8
  • Strawberry icecream – 2tbsp
  • Strawberry syrup/preserve – 1tsp
  • Banana – 1/2, sliced
  • Dry fruits – 1 or 2tbsp
  • Vanilla icecream – 1scoop
  • Fresh cherry/preserved – 1 for topping

Instructions:

  1. In a tall glass, add mango chunks. Add mango icecream. Smoothen the layer for a pretty presentation or leave as is for a messy look. Choice is yours! 😉
  2. Add strawberry jelly cubes. I made with store bought premix. Follow the directions on packet for satisfactory result.
  3. Add a layer of strawberry icecream. Pour strawberry syrup on it. Place banana slices in it. As few dry fruits. Strawberry & banana are a classic combination. One can never go wrong with it.
  4. Add a scoop of vanilla icecream. Garnish with dry fruits and cherry on top. Voila…gadbad icecream is ready to be served.

Fresh-cut chickoo, mangoes, bananas, strawberries, grapes, strawberry jelly cubes, pineapple preserve and strawberry syrup are just few amongst the combinations I have come across so far. Mango icecream, strawberry icecream and vanilla icecream are by far the most common combinations that go into it. Get creative in your own way and make this dessert your own. Add your choice of icecream flavours and seasonal fruits and enjoy through a hot summer day.
