Beetroots are being popularly recognised as superfood in the recent times. It’s health benefits are immense and has all the reasons to be included in our diet on a daily basis. While experts recommend that atleast one beetroot be added to our daily diet, I’m looking at creating variety with them because I know my family and repetition bores them to bits.

I served this beetroot soup to my husband last night…nah, I didn’t dare ask my son to even try it!

There was not a single word from hubby dear and that usually means all is good… that’s his way of saying “I’m enjoying my food”. Beetroot soup passed my hubby’s taste test…happy me!

Including beetroots in our diet around this time of the year means that we are preparing our body to get through the monsoon and the winter approaching thereafter. This is usually the time most of the common illnesses affect our body. So, get into healthy eating habits & try including this superfood in your diet. Beetroot soup is known to be served in both cold and hot form depending upon the season and the climatic region one lives in. I’m sharing here a version of this heart healthy soup seasoned with our trusted Indian spices which are known for their health benefits.

Recipe serves 2
Ingredients:
- 1 Beetroot – medium, diced
- 1 Tomato – de-seeded, quartered
- 1 Bayleaf
- 1/2 inch Cinnamon
- 5 Black peppercorns
- 2 Cloves
- 1/2 inch Ginger – pounded/crushed
- 1 pinch Turmeric powder
- 1/2 tsp Salt
- 1/4 Lemon – juice
For garnishing:
- 2 tsp Fresh cream
- 1 tsp Coriander leaves – finely chopped(optional)
Instructions:
- Pressure cook diced beetroot, quartered tomato, bay leaf, cinnamon, black peppercorns, cloves, ginger, turmeric powder and salt for one to two whistles.
- Turn off heat and allow the steam to be released naturally.
- Once cool, remove the bay leaf.
- Blend the contents to a fine puree.
- Transfer contents to a sauce pan and bring to a boil. Turn off heat.
- Add lemon juice and mix well.
- Garnish with fresh cream and coriander leaves (optional) and serve hot to enjoy in this rainy season.
