Curd Rice

What is the first thing that comes to your mind when you don’t want to cook elaborate meals and something that doesn’t come out of a packet?! 😅 For me it means “Curd Rice” – the absolute comfort food of a South Indian!😊 Today happens to be one such day. It is Friday and I’m already feeling laid back.

When I tell my son it is curd rice for lunch today, the first thing he asks is, “Is it with tadka?”🤣 That’s the way he likes it! You know what… surprisingly my brazilian teens who are not so much fan of plain curd rice like it when curd rice comes with tadka!😊

Steam-cooked rice is mixed with thick & creamy homemade curd and a generous seasoning of mustard seeds, cumin seeds, asafoetida, curry leaves, green chillies, cashew nuts (substitute for peanuts) and lots of raisins because Ronit likes them. I was feeling extra generous, so garnished the curd rice with some pomegranate arils too. They enhance the flavour of curd rice while making this simple dish look extra special! 💕 You may add green grapes too if you like.

I use sona masoori rice while making curd rice. It certainly doesn’t work well with basmati rice.

Curd Rice Recipe

Serves 3
1 Cup = 150 ml

INGREDIENTS:

  • Sona masoori rice – 1 cup
  • Water – 3 cup
  • Curd – 500 ml
  • Oil – 2 tsp
  • Mustard seeds – 1/4 tsp
  • Cumin seeds – 1/2 tsp
  • Asafoetida – a pinch
  • Curry leaves – 1 stalk
  • Urad dal – 1/2 tsp
  • Chana dal – 1/2 tsp (optional)
  • Cashew nuts – 8, halved (substitute with peanuts if not allergic to them)
  • Green chilli – 1, sliced rounds
  • Salt – 1 tsp

INSTRUCTIONS:

For cooking rice:

1) Rinse rice and pressure cook for 3 whistles. Turn off heat. Allow the pressure to release naturally.

2) Once the pressure releases, transfer the rice to a wide mixing bowl and allow it to cool down to room temperature.

For seasoning:

1) Heat oil in a frying pan and add mustard seeds and cumin seeds. Allow to crackle.

2) Add asafoetida, curry leaves, urad dal, chana dal and cashew nuts. Saute until the dals & cashew nuts turn golden.

3) Add green chillies and turn off heat. Saute for 30 seconds.

Assembling:

1) Add curd and salt to the rice. Mix well. Note: Instead of making curd rice entirely with curd, you may also substitute curd with 2/3rd curd and 1/3rd milk.

2) Add the seasoning and mix well. Serve immediately.
