
Malai toast makes for a delicious breakfast or snack dish. It is soft and creamy on top with goodness of veggies and crispy on the bottom just like a toast should be. I believe it is a popular street food from Kolkata. Make some noise Kolkata folks… is this so?
I had earlier shared a couple of versions of this popular Street food – the first one was Carrot Malai Toast and another one, a bit spicier version, Carrot-Capsicum Malai Toast.
It can be made as healthy as you like with vegetable options varying from capsicums, onions, tomatoes to carrots, etc. As for me this is the only approved way my son would have carrots in his food! He says if carrots are served this way, he has no issue eating them!
I was all set to make Carrot Malai Toast for breakfast today and realised I had only one carrot left in the fridge… At that instant the light bulb moment occurred! I remembered the Beetroot Kheer I had made a few days ago. Upon cooking, the strong earthy taste of beetroots had mellowed down and it tasted almost like carrot kheer. So I decided on adding grated beets in the mix for these malai toasts. Psst… My son is not a fan of either carrots or beets. He was in shock looking at the vibrant pink colour of the mixture that was ready to go on toasts. But once mixed with fresh cream, the toasts tasted utterly delicious…even he agreed. Happy mom I am!
Beets are good sources of vitamins and minerals, such as folate, manganese, potassium, iron, and vitamin C. These toasts are a quick and delicious way to include beets in your diet.

Recipe makes 12 toasts
Ingredients:
- Carrot – 1, medium, grated with medium setting
- Beetroot – 1, small, grated with medium setting
- Green chillies – 3, finely chopped
- Onion – 1, medium, finely chopped
- Coriander leaves – 2 tbsp, finely chopped
- Salt – 1/2tsp
- Kashmiri red chilli powder – 1/2tsp
- Fresh cream – 1/4cup
Instructions:
1. Finely chop onion, green chillies and coriander leaves. Finer the vegetables are chopped, easier it becomes to spread on bread. Peel & grate the carrot and beetroot with the medium side of your grater.
2. Transfer all the ingredients to a mixing bowl. Add fresh cream to it. You may use store-bought fresh cream or the one saved from milk at home. Both work fine. Just give it a good mix to form smooth consistency, if using home one.
3. Mix all the ingredients well.

4. Apply a thin layer on a slice of bread. By using either the back of a spoon or a butter knife, spread evenly.
5. On medium flame, heat a non-stick pan. Place the toasts topping side down and cook for a couple of minutes until slightly brown.
6. Check for doneness and turn the toast to roast on the other side until slightly brown and crisp. You’ll notice that by now fresh cream would have been soaked midway through the toast.

7. Slice the toasts in desired shape and serve with hot & sweet tomato ketchup.
