Soups can be of various types – clear soups, thick soups, fruit soups, dessert soups, pulse soups, warm/hot soups, cold soups, etc.
Most of the times a thickening agent is used to give soups the desired consistency. It could be anything from butter, cream, rice, pulses, flour, vegetables such as pumpkin, carrots or potatoes. Depending upon the thickening agent used, all soups fall into one or the other of these categories.
Soup is the best way of getting in your daily dose of vegetables. Served with a salad or slices of buttered toast, soup can make a complete meal.
Here is a wide range of soups you can try this fall/winter season.
1. Beetroot Soup

Including beetroots in our diet around this time of the year means, we are preparing our body to get through the monsoon and the winter approaching thereafter. This is usually the time most of the common illnesses affect our body. So, get into healthy eating habits & try including this superfood in your diet. Beetroot soup is known to be served in both cold and hot form depending upon the season and the climatic region one lives in. 2. Cream of Mushroom Soup : vegan recipe

While cream of mushroom is one of my favourite soups, I wanted it to be dairy-free and all purpose flour free. Dairy adds to congestion and maida certainly doesn’t count as a healthy option… So, I have eliminated both while making this soup. This is a no-butter, no-maida, no-cheese, no-cream, no-milk recipe… yet, the consistency is thick and it’s texture is smooth and creamy just like we all like our cream of mushroom soup to be. 3. Green Peas Soup : vegan recipe

Green peas are a delight to use in coming. But, if you are not feeling upto spending time shelling all those peas or if green peas are not in season where you live, you may also consider using the frozen ones. They taste equally delicious in this soup. I have used frozen peas in my recipe since I wanted to quickly make something warm. 4. Bottle Gourd Soup : vegan recipe

Lauki, also known as bottle gourd, calabash, sorekayi (Kannada) is very well-known for its health benefits. It’s water-rich, nutrient-packed, almost no-fat, and high fiber content qualities make it more desirable. It is known for its anti-oxidant properties, aiding in healthy weight-loss, maintaining good skin health, regulating BP, and it’s high water content aides in hydrating the body. 5. Moroccan Red Lentil Soup

This orange-red soup does not get its colour from tomatoes but mostly from red bell peppers, red lentils and hot & spicy harissa paste. Orange Soup or Narangi Shorba is a spicy-fruity concoction of oranges and tomatoes. Flavour of oranges combines very well with that of tomatoes. Steeped with fresh coriander leaves & stems and a blend of desi spices, gives this soup a very satisfying taste… Check Recipe
7. Potato- Spinach Soup

Growing up I remember my mom would include green leafy vegetables into our diet in as many ways as possible. Aloo-Palak Shorba is my attempt at incorporating this familiar flavour combination in a soup form. The addition of potato to the soup gives it a smooth and thick texture without the need of adding corn starch or cream for thickening or creaminess. Spinach-Almond Soup is a healthy soup with goodness of spinach & almonds. My first encounter with this soup was in our favourite cafe & instantly fell in love with its deliciousness. 12. Sweet Potato Soup

Sweet potato comes in many variants – white, yellow, orange & purple. You can use any of them to make this soup. Sweet potatoes have a high dietary fiber and they are nutrient-packed making them a healthier option too.
