Potato-Stuffed Capsicum | Bharwa Hari Mirch | Stuffed Peppers

Stuffed peppers are made in various parts of the world with variation in terms of the stuffing. Some of the common stuffings are vegetables, cheese, meat & rice. The most common ones in India are the potato and paneer masala stuffing. Although, the bell pepper is the main ingredient in this dish, the taste of the stuffing makes or breaks the dish. It is important that the spices are well balanced in the stuffing. Here I have stuffed the green bell peppers with chatpata potato masala. This curry goes well with rotis as well as rice.

Recipe:

Ingredients:

🔸5 small green capsicums, washed, hollowed
🔸2 medium sized potatoes, boiled, peeled, mashed
🔸1 large onion, finely chopped
🔸3 green chillies, finely chopped
🔸1tsp ginger-garlic paste
🔸1/4cup peanuts, roasted, skinned (can be substituted with roasted cashews in case of peanut allergy)
🔸1tsp kashmiri red chilli powder
🔸1/3tsp turmeric powder
🔸1/2tsp cumin seeds
🔸1tsp coriander powder
🔸1/2tsp amchur powder
🔸1/4tsp garam masala
🔸1/4tsp cumin powder
🔸salt to taste
🔸finely chopped coriander leaves
🔸oil

Instructions:

1️⃣Heat 2tsp oil in a deep flat based pan, add cumin seeds. Once they crackle,add green chillies, onion and saute. When onions turn golden, add ginger-garlic paste and saute until onions turn light brown

2️⃣Lower the heat to avoid scalding of dry masalas. Add peanuts, coriander powder, cumin powder, amchur powder and mix well

3️⃣Add mashed potatoes, garam masala powder, kashmiri red chilli powder, salt & finely chopped fresh coriander leaves and mix well. The stuffing is ready. Allow it to cool down.

4️⃣Slightly cut the base of the capsicum to help them stand upright.

5️⃣Fill the capsicums with the potato stuffing using a small spoon and pack tight.

6️⃣Prick capsicums with a fork to avoid stuffing getting pushed out of the capsicum while cooking.

7️⃣ Heat 2tsp oil in a pan, sprinkle little salt & turmeric. Place the stuffed capsicums in the pan on their sides.

8️⃣Cook covered on low heat. Keep turning little every two minutes to cook on all sides. When all sides are cooked, place them upright and let the base cook.

9️⃣ Serve hot with rotis or rice and enjoy with your family and friends.
