Thandai

“Thandai” is a popular Indian drink associated with Holi – the festival of colours. It is made of dry fruits, spices, rose petals & milk.

Recipe:

This recipe makes 500ml+ of thandai concentrated mix. It can be stored for upto 1 month refrigerated.

Ingredients:

Almonds – 3tbsp
Cashews – 1tbsp
Fennel seeds – 1/2tbsp
Watermelon/cantaloupe seeds – 1tbsp
Black peppercorns – 1tbsp
Pistachios – 1tbsp
Poppy seeds – 1tbsp
Green cardamom whole – 5
Saffron – 2pinch
Gulkand – 3tbsp
Sugar – 300g
Water – 500ml

Method:

1) Soak all dry fruits and spices in water overnight (except 1pinch saffron & gulkand).
2) Grind soaked matter to a fine paste.
3) Add 300g sugar in a deep frying pan, 200ml water, 1 pinch saffron & gulkand to it. Bring it to a boil on high heat.
4) Turn the heat to medium & add the ground paste and cook for 15-20 minutes, stirring continuously. Add some water if the mixture turns very thick.
5) Cool down the mixture completely.
6) To serve, add 1/4th cup thandai concentrate to 1cup cold milk and garnish with crushed pistachios.
