
Vegetable Lollipops – Yes, you heard that right! A fun, flavour-packed lip-smacking party snack I made yesterday for Saturday board-game night with friends. It was a super-hit amongst everyone asking for recipe & with suggestions to make more again next weekend.😆

A little indulgence on weekends is necessary.😉 These yummy lollipops are a burst of flavours with a delicious blend of healthy ingredients like carrots, green peas, paneer, potatoes and a blend of spices to take the flavour a notch higher. Was initially planning to shape them like cutlets, but figured it’ll be easier for the tiny hands to hold them by the stick. Served them with an assortment of three dips because who doesn’t love having variety at a party?! –
Recipe makes 20nos.
Ingredients:
For mixing:
- Paneer – 350gm, grated/crumbled
- Potato – 5, medium, boiled, grated
- Carrot – 1, grated
- Green peas – 1/4cup, thawed, roughly mashed/whole
- Cabbage (optional) – 1/2cup, grated, water squeezed out
- Cashew nuts – 2tbsp, broken pieces
- Ginger-garlic paste – 2tsp
- Green chilli paste – 2tsp
- Mint leaves – 1tbsp, finely chopped
- Coriander leaves – 2tbsp, finely chopped
- Cumin powder – 1/2tsp
- Chaat masala – 1tsp
- Garam masala powder – 1/2tsp
- Bread crumbs – Use 2 slices
- Cornflour – 2tbsp
- Salt – 3/4tsp
- Icecream sticks – 20
For coating:
- Cornstarch – 2tbsp
- Salt – 1/8tsp
- Kashmiri red chilli powder – 1/2tsp
- Water – 50ml approx.
- Bread crumbs – Use 2 slices
Instructions:
1) Mix all the ingredients well & rest them for 10-15 mins.
2) Divide into 20 equal parts or take a fistful of mix for each lollipop. Applying a drop of oil on palms while forming lollipops helps greatly.
3) Form lollipop on icecream sticks.
4) Make a slurry of cornstarch by adding salt, Kashmiri red chilli powder and water.
5) Coat each lollipop with this slurry and coat with fresh bread crumbs. Slightly pat with your palms so that a thin uniform coat of bread crumbs is formed.
6) On medium flame, deep-fry for 1 to 2mins until the coating turns light brown.
7) Blot excess oil on kitchen towel.
8) Serve hot with eggless mayonnaise dip / green chutney /tomato sauce or any dip of your choice. Sharing below quick recipes to few of the dips I served with.
1️⃣Eggless mayonnaise seasoned with a blend of dry mixed Italian herbs, red chilli flakes & fresh parsley for those who like their dip creamy & videshi.😉
2️⃣Green chutney made by blending mint & coriander leaves with green chillies, cumin powder, lemon juice, salt & the secret ingredient – walnuts that add an amazing texture & body to the dip, for those who favour the Indian flavour in their dip.
3️⃣Tomato ketchup because all snacks taste good with it and kids love it too.
