
Stuffed Okra/ Bharwan Bhindi/ Bhindi Fry is stir fried okras which are stuffed with spices such as dry mango powder/ amchoor, red chilli powder, coriander powder, aromatic fennel seeds (saunf) powder, garam masala powder and many more. It is served as a side dish in accompaniment to steamed rice and dal or as a curry with rotis, phulkas, or chapatis.
Okra is a very healthy vegetable and quite popular across all the regional cuisines of India in various forms. Okra is rich in dietary fiber, vitamin C and vitamin K, with moderate amount of thiamin, folate and magnesium.

Bharwan Bhindi is a quick and easy recipe and takes less than 30 minutes from start to end. Anytime you are in a rush, this can easily become your go-to dish! Do give it a try and let me know how it was.
Bharwan Bhindi Recipe
Serves 3
Ingredients:
- Okra/ Bhindi – 250 gm
- Oil – 2 tbsp
- Cumin seeds – 1/2 tsp
- Asafoetida/ hing – a pinch
- Green chillies – 2, slit (sub. Dry red chillies)
- Ginger – 1 inch piece, grated or finely chopped
- Onion – 1, big, diced (sub. 5 to 6 button/ sambar/ madras onions)
- Coriander leaves – 1 tbsp, finely chopped
For Stuffing:
- Coriander powder – 1-1/2 tsp
- Fennel seeds powder – 1-1/2 tsp
- Dry mango powder – 1/2 tsp
- Turmeric powder – 1/2 tsp
- Red chilli powder – 1/4 tsp
- Garam masala powder – 1/4 tsp
- Salt – 3/4 tsp
Instructions:
1) If using large onion, dice it. If using button onions, peel them and keep aside. Peel and finely chop/ grate the ginger. Keep aside.

2) Rinse well and wipe dry all the okra. Cut both the ends off. Make a slit along the length of okra leaving half inch intact on both the ends.

3) Repeat with all the okra.

4) In a small bowl, add all the dry spice powders for stuffing – coriander powder, fennel seeds powder, dry mango powder, turmeric powder, red chilli powder, garam masala powder, and salt.

5) Mix the spice powders well.

6) Fill the slit okras with the stuffing. If there is any stuffing leftover, keep it aside. We’ll use it towards the end.

7) Heat oil in a thick bottomed pan. Add cumin seeds and allow them to crackle.

8) Add asafoetida.

9) Add finely chopped/ grated ginger and red/green whole/slit chilli. Saute for 30 seconds.

10) Add the diced onion. Saute for 30 seconds.

11) Add the stuffed okra.

12) Mix well such that they are coated with oil all over. Stir. Cover and cook on low heat for 10 minutes stirring regularly at 1 minute interval.

13) This is what it looks like after cooking for 5 minutes. Okra will be somewhat tender but needs further cooking.

14) After 10 minutes, okra will have cooked well enough to still remain green and crisp so as to maintain shape. Turn off heat. Add the remaining stuffing powder mix.

15) Mix well. Transfer to a serving bowl, else it will continue to cook because of the heat of the pan.
